Gregory Delgadillo

Gregory J. Delgadillo is the Executive Chef of EAT31. Born in Salinas California, Gregory is bringing 14 years of cooking experience.

He has worked in notable restaurants such as; Saison/San Francisco Ca. , Aubergine/Carmel Ca., Maligne/Seaside Ca., Kaji/Kyoto JP. Including internships at; In de Wulf/Dranouter Bel., Benu/San Francisco.

You may also know him from the local favorite chicken and rice concept, The Rice Gai.

Greg created the EAT31 concept with a mind set of having a community driven full service restaurant that allows the 831 locals a restaurant they can call their own.

Greg believes EAT31 can be a home base for foodies, creatives and entrepreneurs that have the same dream he had when he was young and strives to deliver a premier dining spot with a neighborhood vibe.
